ABOUT THE SITE: Babić is a Dalmatian red grape variety, which is grown at the site of Šibenik vineyards. The vineyards of Testament were planted ten years ago and spread over 50ha in the Jadrtovac area.
Due to its position, the climate is exposed to light local winds that give mediterranean aromatics to wine. On the other hand, the vine grows in harsh conditions, in limestone karst with less than 20% of the soil.
And such conditions are especially conducive to Babić and the grapes are of top quality, and therefore wine.
The harvest was carried out in mid-November 2018. After 60 days of drying on vines (this is the oldest drying method for the production of prosecco), suvice (raisins) are harvested by hand, processed and after 10 days of fermentation / maceration ends and begins 2 aging phases of 24 months in new large barrels made of American and French oak.
