HARVEST DESCRIPTION:
The harvest took place in early August. Technology: traditional – 21 days of maceration/fermentation with natural yeasts.
Mixed on its own precipitate after fermentation and then aged for 6 months in a new 500 liter oak barrel.
Best served at a temperature of 12°C.
SITE:
Although Pošip is a Dalmatian variety of white grapes par excellence, native to the island of Korcula, in the vineyard near Šibenik they have a different character. The vineyard itself was planted about ten years ago and looks south, while the vine was grown in extreme conditions on a meager limestone terroir (with less than 20% of the soil).
The locality as such gives excellent results with a more pronounced minerality compared to the classic Pošip from the island of Korcula.
