The bouquet opens with notes of quince compote, followed by dry fern, star anise, vanilla and herbs. This wine is dry, partly warm and soft, while retaining a crisp freshness, mild tannins, excellent minerality and full body. This is a wonderfully balanced wine with an intense flavor and a long finish. It is harmonious and flavorful with notes of butter, ripe peach and bitter almond in the aftertaste. Use of amphoras in production: The use of clay amphoras in the process of making wine, made it possible to raise the quality of the maceration itself. Mulching grapes in an amphora, prolonged fermentation, resting young wine without removing the grape skins until spring, pressing, these are all primordial ways by which “grapes are turned into wine”, not those by which “man produces wine”. After maceration in amphoras, the wine continues to mature in large wooden barrels where Malvasia favors the creation of a bright amber color.
